Cooking My Way

Continuation of my long term project to cook through my collection of untried recipes.

Quick Sticky Buns
(easy to make and tastes good when warm)
 

1 1/2 tablespoons unsalted butter, cold and thinly sliced into 10 pieces
1 medium banana, thinly sliced (I did not use as I don't like bananas)
1/2 cup (2 ounces) pecans, chopped
3 tablespoons dark brown sugar
1 7.5-ounce tube refrigerated buttermilk biscuits

Preheat oven to 375 degrees.
Drop a piece of butter in the bottom of each of 10 compartments of the muffin tin.  Arrange the banana slices on top.  Sprinkle the pecans and brown sugar over the bananans.  Top each compartment with a biscuit.
Bake until golden brown, 8 to 10 minutes.  Remove from oven.

Place a baking sheet on top of the tin while the buns are still hot.  Carefully flip the tin over, tapping the bottom to release the buns.  Transfer to a platter.  Serve warm.

Bacon Mac
(Yummy but add more seasoning and hot sauce. I also added crispy fried onions to top)
 
3 1/4 teaspoons salt, divided
12 ounces penne pasta (or whatever kind you like)
4 teaspoons all-purpose flour
1 1/2 cups skim milk, divided
2 cups finely shredded sharp cheddar cheese, divided
1/4 cup sliced green onions (I didn't use)
1 teaspoon hot sauce
1/4 teaspoon pepper
2 slices center-cut bacon, cooked and crumbled
cooking spray
 
Preheat broiler.
 
Bring 6 quarts water and 1 tablespoon salt to a boil.  Add pasta; cook 8 minutes or until al dente; drain.
Combine flour and 1/2 cup milk in a saucepan over medium heat.  Gradually add 1 cup milk; bring to a boil.  Cook 1 minutes, stir in constantly.  Remove from heat; let stand 4 minutes or until it cools to 155 degrees.  Stir in 1 1/2 cups cheese.  Add 1/4 teaspoon salt, onions, hot sauce, pepper, and bacon; stire.  Add pasta; toss.  Spoon into a 2-quart broiler-safe dish coated with cooking spray; top with 1/2 cup cheese.  Broil 7 minutes.  Yield: 6 servings.

 Snowflake Muffin Mix
(ok, add more cheese and maybe bacon)


2 cups flour
1 tablespoons dry onion soup mix
1 1/2 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/3 cup oil
1 cup shredded cheddar
1 cup milk

Preheat oven to 400 degrees.

Combine flour, soup mix, sugar, baking powder, baking soda and salt in a medium bowl.  Mix egg, oil, cheddar and milk in separate bowl.  Pour into dry mixture and mix.  Fill 12 greased muffin cups 3/4 full.  Bake 15 to 20 minutes.  Cool 5 minutes.
